RECIPE: Fried Eggs With Chard

Description
Whether you’re using eggs from your own backyard flock or from your local crazy chicken lady, this simple recipe is a great way to elevate your eggs and get in some greens for breakfast.
Ingredients
- 1 clove garlic, minced
- 1/4 red onion, chopped
- 1 Tbsp avocado oil
- 2-3 cups chard, chopped
- 2 eggs
- Salt and pepper to taste
Instructions
- In a nonstick skillet, sauté the garlic and onion in avocado oil. Once soft, add chard. It will cook down drastically, so more is always better. Sauté until the chard is wilted and soft.
- Spread the chard out into a thin layer. Make two circle openings, and crack an egg into each. Place a lid on your pan and cover for 2 to 3 minutes, checking to ensure you don’t overcook your eggs. You still want it a little gooey and runny inside.
- Salt and pepper to taste.
RECIPE: Cottage Cheese Eggs

Cottage cheese makes scrambled eggs light and fluffy, with an extra helping of protein. Add a handful of spinach from the garden or a spoonful of pesto for extra nutrients.
Ingredients
- 2 eggs
- 1/2 cup cottage cheese
- Salt and pepper to taste
- Butter or oil for the pan
Instructions
- Beat together the eggs and cottage cheese with salt and pepper.
- Pour the mixture into a pan coated with a little butter or oil over medium heat. Stirring occasionally, cook until your desired consistency.
RECIPE: Eggy Avocado Toast

Level up this simple recipe by using homemade sourdough or topping your egg with fresh microgreens, chives, or arugula from the garden.
Ingredients
- 1 slice of bread
- 1/2 avocado
- Oil or butter for the pan
- 1 egg
- Salt and pepper to taste
- Red pepper flakes, if desired
Instructions
- Toast the bread.
- Slice or mash up the avocado and spread it over your toast.
- Heat the oil or butter in a pan, and fry up the egg to your liking. Place the egg on top of your avocado toast. Season with flaky sea salt, pepper, and red chili flakes to taste.
