Oysters are a true taste of place, shaped by the waters where they grow. Here on Martha’s Vineyard, our oysters reflect the crisp, briny character of the Northeast and the flavor of our Island waters. Choose local oysters whenever possible to enjoy the unique flavors of your own coastline. And in true Island fashion, you might just know a local oyster farmer who will share a few of their oysters with you. These simple steps will help you safely shuck oysters at home.

- Oyster knife
- Thick kitchen towel or cut resistant glove
- Cutting board or tray to catch any oyster liquor
How to Shuck an Oyster
1. Position the oyster: Place the oyster cup-side down with the hinge facing you. Hold it firmly in a folded towel, leaving the hinge exposed.
2. Insert the knife: Place the tip of the oyster knife into the hinge. Wiggle it gently while applying steady pressure until the knife slips into the shell.
Safety tip: Wear a cut resistant glove or use a thick towel to protect your hand in case the knife slips.
3. Twist to pop the shell: Twist the knife as if you're turning a key to pop the hinge open. Avoid forcing the knife straight into the shell.
4. Separate the top shell: Slide the knife along the inside of the top shell to cut the adductor muscle. Lift off the top shell and discard it.




5. Free the oyster: Run the knife underneath the oyster to detach it from the bottom shell, taking care not to spill the flavorful oyster liquor.
6. Inspect and serve: Check for any shell fragments and remove them if needed. Serve immediately over crushed ice with your favorite accompaniments, such as mignonette, fresh lemon wedges, cocktail sauce, or a dash of hot sauce.
Tip: Keep oysters chilled until you're ready to shuck, and discard any oysters with cracked shells. Fresh oysters should smell clean and briny, like the ocean.
