  • Yield: Serves 6-8 1x

Description

There is no shortcut to perfectly caramelized onions unfortunately. They need to slowly caramelize over a medium-low heat, but the results are so delicious that you won’t regret the time spent. Shallots make for an excellent substitution for onions in this recipe.

Ingredients

Units Scale
  • 4 onions (or shallots), diced
  • 6 Tbsps olive oil, divided
  • Salt to taste
  • 1/2 cup plain, unsweetened plant-based yogurt
  • 1 tsp garlic powder

Instructions

  1. Sweat the onions in 3 tablespoons of olive oil over medium heat until soft, fragrant, and golden. Add a generous pinch of salt and stir occasionally. This should take about 40 minutes. Leave to cool.
  2. Stir caramelized onions into the yogurt along with garlic powder and 1 tablespoon olive oil. Add more salt to taste and finish with another drizzle of olive oil before serving with your favorite crackers, chips, or crudités.

Notes

When using the food processor, always make sure it’s unplugged before dipping in a finger or tasting spoon.
