    Miso and Maple

Whisk with butter, olive oil, or coconut oil, and roast with root vegetables like sweet potato and carrots or use as a glaze for a fat-forward fish like cod or salmon.

    Hazelnut and Chocolate

Crushed, roasted, skinless hazelnuts and melted chocolate make an over-the-top topping for ice cream, pie, or even toast. Blend the mixture with a splash of neutral oil (like avocado oil) and a pinch of salt for a homemade chocolate-hazelnut spread.

    Apples and Cheddar

Layer into a grilled cheese or tuck into homemade pie crust (or store-bought pastry) with honey and thyme for a savory-sweet galette.

    Horseradish and Sour Cream

Whisk into a cool sauce to cut through rich meats. Sub the sour cream with labneh for a thicker, tangier option and fresh chives for added brightness.

    Mayonnaise and Chipotle Peppers

Purée into an addictive sauce for dipping shrimp, steak sandwiches, or quick burritos. A tablespoon or so of canned peppers should be enough. Add fresh or roasted garlic for an added layer of flavor.

    Anchovy and Butter

Mash into a compound butter to melt over hot pasta or steamed greens. Add garlic and serve warm or cold with crudités for a quick Italian-style dip.

    Mushrooms and Thyme

Sauté together and spoon over toast, or add butter and cream for a quick sauce for pasta or meatballs.

    Pistachio and Cardamom

Fold into cakes, pies, and trifles, or serve over yogurt.

    Honey and Rosemary

Warm gently and drizzle over chicken, baked brie, or roasted grapes.

    Fennel and Citrus

Thinly slice fennel and your favorite citrus to instantly elevate any winter salad.

    Pear and Blue Cheese

Pile onto crostini with a drizzle of honey for a fast and impressive appetizer.

    Coconut Milk and Curry

Use curry paste or powder to simmer this combo into an instant weeknight curry to go with lentils, chicken, noodles, or rice.

    Pumpkin and Sage

Stir into risotto or pasta or even bake into a galette for a tasty cozy dinner.

    Kimchi and Butter

Spicy, crunchy, tangy, kimchi mellows out against rich and creamy butter, creating a balance of flavor and texture. I enjoy topping rice crackers with kimchi and butter for a quick, filling snack or topping a bowl of steamed rice with a fried egg, butter, kimchi, and scallions for a quick meal. – Vanessa Seder
