    RECIPE: Apple, Lemon, and Chia Seed Cooler

    Description

    This naturally sweetened, slightly tart beverage is made with apple cider, fresh lemon, and chia seeds. Chia seeds — a staple of health food stores and juice bars — originated in and were a major crop in Mexico and Guatemala as early as 3500 BC. They are rich in omega-3 fatty acids, fiber, phosphorus, protein, and calcium, and characterized by their gel-like consistency. When making this cooler, the chia seeds rest in the apple cider for about 15 minutes, which allows them time to swell and gel. This cooler is best made and served on the same day.


    Ingredients

    • 4 cups apple cider
    • 1/2 cup fresh lemon juice
    • 2 tablespoons chia seeds
    • 1 whole lemon, washed and thinly sliced
    • 1 apple, washed, cored and thinly sliced
    • 1 cup ice cubes
    • 2 cups sparkling water or flat filtered water

    Instructions

    1. In a large pitcher combine the apple cider, lemon juice, and chia seeds, and whisk to combine. Let sit at room temperature until the seeds begin to gel, about 10 minutes. Whisk to combine and separate any seeds that have stuck together. Let sit about 5 minutes more and then whisk again.
    2. Add the sliced lemon, apple slices, ice cubes, and water of choice to the pitcher and stir to combine. Divide the cooler between 4 tall glasses and garnish each with some apple slices. Serve immediately.
