    Description

    If you’re feeling like battered fish, chicken, or calamari, but don’t want the environmental impact of animal products, these crispy morsels are the perfect plant-based solution. Double-dredged oyster or enoki mushrooms, fried to perfection, are a hearty appetizer to serve to guests at a dinner party, or can be a crispy sandwich filling.

    1. In a deep fryer or heavy-bottomed pot, heat oil until it reaches 350°F. (I used a pot and heated the oil over medium-high heat.)
    2. Meanwhile, in a shallow dish, whisk the flour, cornstarch, paprika, onion powder, garlic powder, salt, poultry seasoning, and pepper until combined.
    3. Remove 1/3 cup of the flour mixture to a separate shallow dish. Gradually whisk in the bouillon base and beer until smooth.
    4. Dip each piece of mushroom in the wet mixture until covered, then dip in the dry mixture, tossing to coat. Repeat the coating process once.
    5. Carefully transfer the battered mushrooms to the hot oil. Deep-fry until golden brown, 3 to 5 minutes. With a slotted spoon, remove the mushrooms to a wire rack set over a tray to cool slightly and to drain the excess oil.
    6. While mushrooms are cooling, combine mayo, sriracha, and garlic. Serve hot mushrooms with aioli for dipping.

    Notes

    • Make this a main dish by serving mushrooms on a bun with your favorite coleslaw and use the aioli as a sandwich spread. Or, make some oven-fries and have faux fish and chips, complete with lemon wedges and tartar sauce!
    • Have leftovers or want to make this ahead of your party? Reheat mushrooms in an air-fryer or convection oven at 350°F until hot and crisp, about 3 to 5 minutes.
