Description

Jennie loves making a frittata for brunch, especially for book club.

She starts with fresh eggs from her ducks and chickens. “My version is always vegetarian and gluten free,” she says.


Ingredients

Base:

  • Fresh eggs

Add:

  • Whatever vegetables are in season
  • Red pepper
  • Baby spinach
  • Whole milk (or dairy alternative)
  • Salt
  • Pepper
  • Fresh Thyme
  • Topped with goat cheese

Instructions

Cook everything in a cast iron skillet. Jennie recently switched to an induction stove and was happy to discover her cast iron pans still work perfectly. “Win win!”

  1. Directions could have a few more details, like cook on low heat or medium heat, cover and cook for 10 minutes on low or cover and finish in the oven at some temp. Having never cooked a fritatta before, I am wishing for a few more details than just scrambling eggs with veggies. Thanks in advance!
