Description

A mildly “swicy” (yep, that’s sweet and spicy) glaze gives a trendy upgrade to a classic comfort food: meatloaf. The best part? It’s entirely plant-based and has some fiber from whole grain oats as the binder. Enjoy with your favorite sides, such as mashed potato and a crisp salad.

Instructions

  1. Preheat the oven to 375°F.
  2. In a medium bowl, combine ground beef substitute, oats, 3 tablespoons ketchup, mustard, vinegar, soy sauce, flax, onion powder, garlic powder, paprika, salt, and cayenne pepper. Mix well.
  3. Shape the mixture into a 6-inch-long loaf shape on a parchment paper-lined rimmed baking sheet. Bake for 15 minutes.
  4. Meanwhile, make the glaze. In a small bowl, stir together 3 tablespoons ketchup, brown sugar, and sriracha until combined.
  5. When the loaf has baked for 15 minutes, remove from the oven. Brush all over with the glaze.
  6. Return to the oven and bake for 25 to 30 minutes, or until glaze is set and shiny, and meat loaf is cooked through to 165°F. Let stand for 10 minutes before slicing.
