RECIPE: Sweet and Spicy Glazed Plant-Based Meatloaf

Description
A mildly “swicy” (yep, that’s sweet and spicy) glaze gives a trendy upgrade to a classic comfort food: meatloaf. The best part? It’s entirely plant-based and has some fiber from whole grain oats as the binder. Enjoy with your favorite sides, such as mashed potato and a crisp salad.

- 1 1/2 lbs plant-based ground beef (such as Beyond or Impossible)
- 1/3 cup quick oats
- 6 Tbsps ketchup, divided
- 2 Tbsps Dijon mustard
- 1 Tbsp red wine vinegar
- 1 Tbsp soy sauce
- 2 tsps ground flax seed or whole chia seeds
- 2 tsps onion powder
- 2 tsps garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp cayenne pepper
- 2 Tbsps packed brown sugar
- 2 Tbsps sriracha
Instructions
- Preheat the oven to 375°F.
- In a medium bowl, combine ground beef substitute, oats, 3 tablespoons ketchup, mustard, vinegar, soy sauce, flax, onion powder, garlic powder, paprika, salt, and cayenne pepper. Mix well.
- Shape the mixture into a 6-inch-long loaf shape on a parchment paper-lined rimmed baking sheet. Bake for 15 minutes.
- Meanwhile, make the glaze. In a small bowl, stir together 3 tablespoons ketchup, brown sugar, and sriracha until combined.
- When the loaf has baked for 15 minutes, remove from the oven. Brush all over with the glaze.
- Return to the oven and bake for 25 to 30 minutes, or until glaze is set and shiny, and meat loaf is cooked through to 165°F. Let stand for 10 minutes before slicing.
