RECIPE: Vegan Mini King Cakes
- Yield: Makes 8 mini cakes 1x
Description
What’s a king cake? Only one of the foods most central to Mardi Gras celebrations. The purple, green, and gold king cakes originated from European epiphany celebrations, symbolizing the visits of the Three Wise Men. French settlers brought the recipes to Louisiana, and rumor has it if you make one, you’ll be visited with good fortune. Even more good fortune if you make it vegan. (Thanks, PETA!)

- 1 can cinnamon rolls (try Immaculate Baking)
- 1/4 cup decorating sugar (green, yellow, and purple)
Instructions
- Preheat the oven to 350°F, or to the temperature in the package directions. Open the can of cinnamon rolls and unroll. Fold each section in half and twist repeatedly, then form into a circle and place on a baking sheet.
- Bake for 12 to 14 minutes, or until golden brown.
- Drizzle with the cinnamon roll icing (thawed according to package directions) and sprinkle with the decorating sugar.
