Tsar Nicoulai Caviar

In the 1980s, the caviar market was a tangle of dubious overfishing practices and politically fraught, Cold War-era trade embargos where black market roe reigned supreme. Amidst this confusion, Tsar Nicoulai’s founders built a new kind of caviar company, based on the principles of traceability, environmental stewardship, and flavor. These self-proclaimed “pioneers of sustainable American caviar” hatch all their own sturgeon and feed the fish non-GMO feed with no growth hormones or antibiotics. The Northern California-based operation works in partnership with UC Davis to continuously improve aquaponics filtration systems that reduce water usage while keeping both fish and water clean. Monterey Bay Aquarium’s Seafood Watch program has rated their caviar a Green “Best Choice” option.
